Spiced Tropical Chutney for Oats

Ingredients:
2 tablespoons fresh grated ginger
2 teaspoons lemon zest
½ teaspoon cinnamon
½ teaspoon coriander
¼ teaspoon cardamom
2 mangoes, chopped
1 papaya, chopped
1 medium-sized pear, peeled and chopped
¼ cup golden raisins
½ cup brown sugar
1 cup apple cider vinegar
Directions:
Combine all the ingredients in the Instant Pot and stir. Using the pressure cook option, manually set the cooker for 6 minutes on high.
Use the natural release method to release the steam from the cooker. This should take about 20-25 minutes.
Once the steam is released, carefully open the lid to the cooker.
Turn the cooker to the sauté setting.
Cook the chutney, stirring for approximately 12-15 minutes or until thickened.
Serve warm over oats or biscuits.
