Sweet Potato Apple Hash

Ingredients:
1 tablespoon coconut oil
½ cup sweet yellow onion, diced
½ cup celery, finely diced
2 cups sweet potatoes, peeled and chopped
¼ cup vegetable broth
1 cup apple, chopped
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon nutmeg
1 teaspoon thyme
¼ cup scallions, chopped
Directions:
- Add the coconut oil to the Instant Pot and select the sauté setting.
- Once the oil is hot, add in the onion and celery. Sauté the mixture for 2 minutes before adding in the sweet potatoes. Stir and sauté an additional 3 minutes.
- Add in the vegetable broth and seal the cooker. Using the pressure cook option, cook on high for 2 minutes.
- Use the quick release option to release the steam from the cooker.
- Stir in the apples, salt, black pepper, nutmeg and thyme. Reseal the cooker, bring it back up to pressure, and cook for an additional 2 minutes.
- Use the quick release option to release the steam from the cooker and carefully open the lid.
- Garnish with chopped scallions before serving.
