Sweet Potato Apple Hash



Serves: 2, approximately 1 ½ cups per serving 
Cook Time: 10 minutes 
Preparation Time: 5 minutes 
Passive Time: None 

Ingredients: 

1 tablespoon coconut oil 
½ cup sweet yellow onion, diced 
½ cup celery, finely diced 
2 cups sweet potatoes, peeled and chopped 
¼ cup vegetable broth 
1 cup apple, chopped 
½ teaspoon salt 
½ teaspoon black pepper 
½ teaspoon nutmeg 
1 teaspoon thyme 
¼ cup scallions, chopped 

Directions: 
  1. Add the coconut oil to the Instant Pot and select the sauté setting. 
  2. Once the oil is hot, add in the onion and celery. Sauté the mixture for 2 minutes before adding in the sweet potatoes. Stir and sauté an additional 3 minutes. 
  3. Add in the vegetable broth and seal the cooker. Using the pressure cook option, cook on high for 2 minutes. 
  4. Use the quick release option to release the steam from the cooker. 
  5. Stir in the apples, salt, black pepper, nutmeg and thyme. Reseal the cooker, bring it back up to pressure, and cook for an additional 2 minutes.
  6. Use the quick release option to release the steam from the cooker and carefully open the lid. 
  7. Garnish with chopped scallions before serving.
