Chicken Enchilada 


Ingredients: 



  • 4 ½ cups of cooked chicken, shredded
  • 9 (6 inch) corn tortillas
  • 28 ounces of green enchilada sauce
  • 4 cups of Monterey jack cheese, shredded
  • 1 ¼ cup of sour cream Black pepper Salt 

Directions: 


  • Preheat the oven to 375 degrees F. 
  • Lay half of the chicken in the bottom of a greased baking dish followed by half of the enchilada sauce, half of the sour cream followed by half of the tortillas and half of the cheese. 
  • Repeat the process to make a second layer. 
  • Cover the enchilada with a piece of foil then bake it for 40 min. 
  • Once the time is up, remove the foil and bake it for another 10 min. 
  • Serve your enchilada warm and enjoy.
