Baked Chicken with Artichokes


Ingredients: 



  • 5 boneless, skinless chicken breasts salt 
  • black pepper 
  • 1/2 medium red onion, sliced 
  • 2 tablespoons olive oil 
  • 1 (8 ounce jar) quartered artichokes, drained 
  • 1/2 lemon, cut into 5 slices 
  • 1/2 teaspoon dried oregano 
  • 1/2 teaspoon dried thyme 

Directions: 


Season the chicken with a little salt and pepper.

In a skillet over medium heat, cook the onions in 1 tablespoon olive oil for 5 minutes. Remove onions from skillet.

In the same skillet add 1 more tablespoon olive oil, cook chicken over medium heat for 5 minutes on each side.

Place onions, chicken and artichokes in a baking dish coated with cooking spray.

Top with lemon slices, sprinkle with oregano and thyme.

Cover the baking dish with foil.

Bake for 15 minutes at 350 degrees F.
