Jalapeno Deer Jerky 


Ingredients 


  • 2 lbs deer, sliced thick 
  • 1⁄4 cup soy sauce 
  • 1⁄4 cup honey 
  • 1⁄4 cup maple syrup 
  • 6 tablespoons lemon juice 
  • 1⁄4 cup pickled jalapeno pepper, minced 
  • 2 tablespoons garlic, minced 
  • 1 teaspoon salt 
  • 1 teaspoon pepper 


Directions 


  • Rub salt into meat. 
  • Make marinade, add meat and place in glass container in fridge overnight. 
  • Preheat oven to 170 degrees F (or as low as it goes). 
  • Put meat on baking racks then set on the foiled oven rack to dry. 
  • Prop the oven door open with an oven mitt to allow moisture to escape. Leave meat in the oven for approximately 7 hours or until meat is dry.
